Step 1:
In a large skillet over medium heat, add olive oil. Sauté onion and bell pepper for 3 4 minutes until softened.
Step 2:
Add sausage and cook breaking it up until browned and cooked through about 5 6 minutes. Drain excess fat if needed.
Step 3:
Stir in chopped spinach and cook for 1 minute until wilted. Transfer mixture to a bowl and set aside.
Step 4:
In a mixing bowl whisk eggs milk salt pepper and chili powder (if using).
Step 5:
Pour eggs into the same skillet and scramble gently over medium low heat until just set but still soft. Remove from heat.
Step 6:
Warm tortillas in the microwave for 20 seconds to make them pliable.
